Indian-born chef Vineet Bhatia takes the reigns at the sea-facing Ziya restaurant in the Oberoi Hotel at Mumbai’s Nariman Point. Bhatia’s team prepare delectable dishes such as grilled ginger-chili lobster and succulent, slow-cooked raan (leg of lamb).
